From Tom’s Waitrose cooking class Dec 2011

This Recipe is for Children’s truffles and is from Thomas’ cooking lessons at Waitrose. Both of them loved these and we have since made them a few times.

Children’s Truffles

Since these are for children, they are a little less rich than the authentic Belgian Variety. the high-Quality Chocolate used still gives full flavour though, and the cream is replaced with Chocolate sponge cake crumbs and ground Almonds. Making the truffle Balls and rolling them in cocoa Powder is exactly the kind of ‘cookinng’ that children enjoy most.

Preparation Time: 20-25 minutes +30 minutes cooling time
Total Time: 50 minutes to 55 minutes

Makes 24 balls

Ingredients:

2 x 100g bars Waitrose Organic Belgian milk or Plain Chocolate

1x Waitrose loaf Cake, Crumbled

50g Waitrose Ground Almonds

Cocoa Powder for dusting

Super cook Writing Icing pens or Super cook ready to roll coloured icing Regal Ice to decorate

Method:

1.break up the chocolate and place in a heatproof bowl over a pan of very gently simmering water. leave until melted, stir until smooth, then remove the bowl from the pan.

2. stir in the cake crumbs and ground almonds into the chocolate mixing well, chill the mixture for 30 minutes. Roll the mixture into balls, using about 1 heaped tsp of the mixture for each, then toss into the cocoa powder to coat. set the truffles in petits fours cases. they can also be decorated to look like mini Christmas puddings using supercook writing icing or ready to roll regal ice.
